一、客家饮食文化的特色

客家人是中原南下的移民,由于种种历史的原因,迁至岭南山区后,完整地保留了中原的语言与饮食习惯;而且,由于客家人居住地区大都是远离海洋,客家菜便以内陆型的油重味浓、咸香软糯为特色。

客家菜的用料大都以家禽和野味为主,追求原汁原味,即“饭有饭香,肉有肉味”。有所谓“无鸡不清,无肉不鲜,无鸭不香,无鹅不浓”的讲法。注重火功,以蒸、焗、煲、酿见长,尤以砂锅菜闻名。客家菜讲求四时节气,有“冬羊、夏狗、春鸡、秋鸭”之说。

客家聚居地以闽粤赣边区的大三角为主,这里不但有跨越赣南、闽西的武夷山脉,有横贯赣南的五岭之一的大庾岭和罗霄山脉,还有闽西境内的玳瑁山脉、彩眉山脉、博平岭山脉、松毛山脉以及五岭余脉。粤东境内的尚有项山山脉、阴那山脉、凤凰山脉、释迦山脉等。高峻延绵的山脉和低矮起伏的丘陵地带交结,形成了大小不等的盆地。总体来说,客家聚居地以山地为主,夹以河床谷地。客家先民从北方迁到南方,吸取了土著居民长期形成的与当地地理环境相适应的饮食经验,逐渐形成了自己新的饮食理念和烹制技法:

烹调方法注重炖煮,以原昧香鲜为主,刀功朴实无华客家饮食的烹调方法以炖、煮为主,较少的炸烤。
